BBQ Smoker Puddings: The Best Puddings for Any Barbecue
The smell of a barbecue is synonymous with memories of long, lazy days in the garden indulging in all kinds of culinary treats…unless your barbecues tend to be more burnt sausage and burger affairs that is! Many people try hard to get the right menu for their barbecues and with all the products which are available today, this should not be difficult to achieve.
One aspect of the traditional barbecue which many people can’t quite manage to get a grip of however is BBQ smoked puddings! There are many delicious puddings which can be prepared solely on a barbecue and which with the unmistakable tinge of wood smoke, add a wonderful twist to the modern, outdoor meal.
Sticky Fruit Skewers Smoked
This is a sugary treat which should be enjoyed by children especially and which is simple to make but looks great on a plate!
- Selection of fruit including strawberries, apples, bananas, pineapple, strawberries and grapes
- Orange juice
Push bite sized chunks of fruit onto a skewer and intersperse them with marshmallows. Drizzle with the orange juice and sprinkle with a little cinnamon if desired. Place on the barbecue for three minutes per side and serve with ice cream.
Special Baked Apples smoked
This simple favourite is great for an evening barbecue when the temperature drops a little, warming and tasty these traditional baked fruits are a good addition to any barbecue menu and can be served with dollops of fresh cream, custard or just eaten alone straight from the barbecue.
- 8 large apples
- Dried fruit, blueberries or apricots
Remove the core of each apple and fill the void with your choice of fruits; sultanas, raisins, blueberries or apricots work well but you can feel free to experiment here! Add a sprinkle of cinnamon to the centre of each apple and wrap in a tinfoil “bundle”. Cook the apples on the barbecue for around 20 minutes and then serve as desired.
Skewered Cake Surprise
A more filling take on traditional fruit skewers, this is an easy recipe and one which is good for using up the remains of any cakes which have not been finished. Sponge or fruit cake will work as well as any and your choice of fruit is up to you but soft fruits work particularly well.
- Cake cut into cubes
- Selection of soft fruit including plums, oranges, grapes and strawberries
- 5 tablespoons of Apricot jam
- Pinch of cinnamon
- Tbsp of butter
- Tbsp of water
Method of making this barbecue smoked pudding
Thread fruit onto skewers in bite sized pieces and alternate each piece with a chunk of cake; set aside. In a saucepan mix water, cinnamon, butter and jam and warm through on a low heat stirring for around 5 minutes or until combined. Remove from heat and using a pastry brush cover the fruit and cake skewers with the apricot jam mixture and place on barbecue. Cook for around a minute on each side until the cake just changes colour. Serve with napkins wrapped around the skewers.
